French Beans with Tarragon and Eggs

(Serves 2 people)

1 frying pan

Ingredients

1 egg
½ lb French beans - topped and tailed
1 teaspoon mustard seeds
1 teaspoon cumin seed
1 crushed clove garlic
1 chopped medium sized onion
1 teaspoon turmeric
1 teaspoon coconut milk powder
Handful tarragon
1 dessertspoon vegetable oil
Water (enough to cover beans)

Method

Place the oil in a frying pan and warm through on a medium heat.

Place the onion, garlic, turmeric, mustard seeds, and tarragon and cumin seeds into the pan and gently fry until the onion is soft.

Add the French beans and fry for a couple of minutes.  Add enough water just to cover the beans, and cook until the beans are soft.

Add boiling water to the coconut milk powder and stir well.  Add this mixture into the French bean pan, give everything a good stir and heat through just for a couple of minutes.

Break an egg into a jug and whisk thoroughly.  Add this to the cooked mixture and give everything a good stir.

Pour into a warm dish to serve.

This dish can be a vegetable addition to a meat curry or can be eaten with rice on its own.

(Be careful when cooking this dish for vulnerable groups of people, because of the egg)
