Summer Day Cooking for Winter Day Eating

I have once again tried to keep my preserve making nice and simple, nobody wants to spend all day chopping, cooking and potting up.
I have used fresh ingredients every time and it is lovely being able to taste the fruit in the preserves, which is what I feel, is missing a lot of the time.
There is nothing nicer than over a Christmas period or a cold winter’s day, to be able to bring a little bit of summer and lots of lovely summer flavours into your meal.
